Typically people don't put the word "best" before meatloaf, but I regularly hear I have the best meatloaf recipe people have ever tried.
I don't understand it, I grew up eating this meatloaf, it's always been tasty- why the meatloaf hate? I still haven't had a meatloaf that is terrible (and I haven't had them all!), so if you hate meatloaf, tell me in the comments why!
So how do I get my Halloween party (and friends and family) eating meatloaf every year? Let me share....
The Best Meatloaf Recipe
While I usually end up tossing a rough idea of these ingredients together...that's not how you share a recipe, so here goes:
1lb ground beef
1lb ground turkey
1 egg (or 1T flaxseed to 3T water until gelatinous)
1 cup panko, gluten free panko, or breadcrumbs
1 yellow onion finely chopped
3 stalks celery finely chopped (roughly 3/4 cup)
4 cloves of finely shopped garlic (or 2 tablespoons)
1 tablespoon Italian seasoning spice (I'm partial to Penzey's
1/4 cup brown sugar*
2/3 cup ketchup*
Pre-heat the oven to 350. Add all the ingredients except the brown sugar and ketchup to a bowl, mix until they're thoroughly combined. Shape into a loaf on a rimmed pan or place into a loaf pan to bake. Place in your pre-heated oven for 50-60 minutes or until the middle of your meatloaf reaches 160 degrees. While your meatloaf is baking, in a small bowl mix together the ketchup and brown sugar.
When your meatloaf is done, let it cool for 10 minutes then spread the ketchup and brown sugar mixture over the top.
*This is one area where you should use your discretion. If you are only covering a small area, make less, if your are covering a larger area, you may want more.

As I mentioned, every year I make my meatloaf for Halloween. These pictures will not make you want to eat meatloaf, which maybe should give my recipe more credit seeing as I never have leftovers!
